Grilled Cotija Corn On The Cob
Ingredients
- 1/2 cup unsalted butter, softened
- 1/4 cup minced cilantro
- 1 tablesppon lime juice
- 1-1/2 teaspoons grated lime peel
- pinch of salt
- 8 ears sweet corn, husks removed
- grated cotija cheese
- 1/2 cup mayonoise
Directions
- In a small bowl, mix butter, cilantro, lime juice, lime peel, and a pinch of salt.
- Coat the husked corn with the cilantro lime butter.
- Grill corn over medium heat for 20-25 minutes or until tender. Occasionally turning and coating with the remaining cilantro lime butter.
- Remove the corn from the grill.
- Coat corn with a thin layer of mayonise.
- Roll each ear of corn in cotija cheese.
- Serve and Enjoy!
