Guacamole (gwa:ke'mouli), is an avocado-based sauce that originated with the Aztecs in Mexico
Ingredients
2 avocado
1 diced Roma tomato
1 bunch of scallions diced
1 jalapeno, seeded and diced
1 handful of diced cilantro
1tsp. minced garlic
1/2 of a fresh lime
1 fresh pomegranate or 1 handful of craisins
Sea salt and fresh-cracked pepper to taste
Preperation
Dice avocado into small chunks and place in a serving bowl. Add tomatoes, onion, jalapeno, cilantro, and garlic. Squeeze fresh lime juice over mixture. Sprinkle with salt and pepper to taste. Fold together gently. Add pomegranate seeds. Mix gently and serve immediately.
Tip: Leave the pit of the avocado in the guacamole mixture to keep it from turning brown.
Makes 4-8 servings.
